Transfer noodles to serving bowl and top with pork mixture. Stir vinaigrette and spoon over and around the noodles (you may not want to use all of it). Sprinkle with roasted peanuts, Sichuan peppercorn, grated garlic, and scallion greens. Serve immediately.

The challenge with stir-frying at home is that most home ranges don't have a powerful enough burner to stir-fry in big batches, like restaurants do. The solution is to break the stir-fry into stages, which avoids overcrowding the pan. We start by searing the vegetables in smoking-hot oil, then transfer them to a plate—they should be singed here and there, while still retaining a fresh bite.

To finish off the stir-fry, we add the vegetables and pork back to the wok along with the noodles, and toss it all together with a flavorful sauce made from soy and oyster sauces, rice wine, and Chinese black vinegar. There's just enough cornstarch in the sauce to help it thicken up and coat everything in a very light glaze.

Heat 1 teaspoon oil in a wide nonstick skillet over high heat until shimmering. Add mushrooms and cabbage and season lightly with salt. Cook, stirring and tossing frequently, until barely cooked through but still bright, about 3 minutes. Transfer to a medium bowl. Add 1 more teaspoon oil to wok and return to high heat until lightly smoking. Add carrot and snow peas and season lightly with salt. Cook, stirring and tossing frequently, until barely cooked through but still bright, about 3 minutes. Transfer to bowl with mushrooms and cabbage.

One of the secrets to making a restaurant-style stir-fry is water-velveting —marinating meat with egg white, wine, and cornstarch, then blanching it, allows it to achieve an almost unnatural level of silkiness. This recipe shows off the technique, pairing water-velveted chicken with savory oyster sauce and both fresh and rehydrated dried mushrooms.

Now, you're just ten minutes away from dinner. Flash stir fry the veggies in a skillet. Then add freshly grated garlic and ginger and pre-cooked lo mein noodles. Once the garlic and ginger are fragrant and the noodles and veggies have become tangled together, just add soy sauce. Then, get your chopsticks ready, and dig in.

Remember that article Mark Bittman wrote for the New York Times a few years ago recommending that we flip the script on pasta, and serve it with a ton more sauce? I like to think of this dish in a similar way, though instead of extra sauce, it's extra veggies. While stir-fried lo mein is typically noodles with some vegetables for flavor and color, this version comes out with veggies and noodles in almost equal proportions. That means it's packed with more flavor, in this case cabbage charred until sweet, along with meaty shiitake mushrooms, and [[https://noodleinsight.com/|Https://Noodleinsight.Com]] big stalks of chives.

For the vegetables, we choose a colorful array of add-ins, including thinly shredded purple cabbage, bright green Chinese broccoli (though you can substitute Napa cabbage), and thin strips of julienned carrot. Garlic, ginger, and scallions, meanwhile, add aromatic depth, if not much color.

"Ma po tofu is a lot of fun with a demi-sec wine from Alsace, like Sylvaner, or a bigger Pinot Gris. These wines have a mellow sweetness and bright acidity. For mushu pork, I think pairing with Riesling or a dry Tokay goes well; Furmint has a lot to offer to all the ingredients from this dish and we don’t play a lot with Hungarian wines, but there is a lot of great potential here. For the Pièce de résistance, peking duck? Well, you must break this down to white, red, or what the person in front of you likes better. If your dining companion likes white better, go with Loire Chenin Blanc. For red, I would go with Languedoc—a medium to bigger body, jam-plummy wine. Corbieres any one?"— Gerardo Acevedo-Vanni, Bocanova (Oakland CA)

Wipe out wok. Add remaining 1 tablespoon oil and heat over high heat until smoking. Add noodles and cook, tossing and stirring, until hot. Add cabbage, mushrooms, chives, and minced garlic. Cook, tossing, until garlic is fragrant, about 30 seconds.

As tempting as it can be to reach for a jar of ready-made curry paste, nothing you'll get in a store compares to what you can make at home. For this Thai dry curry, we use a mix of fresh and dried chiles, galangal, garlic, shallots, lemongrass, and makrut lime leaves to make a chile paste, which we then use to flavor crispy tofu and blistered green beans.

Add remaining sauce, vegetables, and pork to noodles and toss well over heat to combine. Transfer lo mein to a platter and sprinkle sliced green scallions all over, along with sesame seeds, if using. Serve right away, passing sambal oelek at the table if desired.

If you only ever eat cucumbers raw or pickled, you aren't using the vegetable to its full potential. Salting and lightly cooking cucumbers tenderizes them, turning their crunch into a meaty bite. One of our favorite ways to cook cucumbers is in this easy stir-fry, seasoned with marinated ground pork, soy sauce, and sesame oil.
